Cook Time 15mins
350g halved cherry or grape tomatoes
1 onion thinly sliced
4 cloves thinly sliced garlic
2 sprigs fresh basil
2 tablespoons extra virgin olive oil
4 1/2 cups of water
diced mozzarella (amount desired)
salt and pepper to taste
1. Combine pasta, tomatoes, onion, garlic, basil, olive oil, water, salt and pepper in a large pan.
2. Bring mixture to a boil, stir until the water has boiled off.
3. Remove from heat, add in mozzarella.
4. (Garnish with fresh basil and parmesan cheese)
