This is a super healthy and nutritious Brazilian style salad which is light and easy to make without a fuss.
1) Begin by chopping the kale into pieces and sautéing it in a pan with a tablespoon of the olive oil for 3-4 minutes or until the kale has wilted a bit.
2) Once done, in a bowl, add the kale from the pan, chopped mango, and pine nuts.
3) Toss them together and add the rest of the olive oil, the lemon juice, and salt and pepper to taste.
4) Toss the salad one more time and serve.
