FRENCH TOAST WITH FRUIT

INGREDIENTS
Serves 4
2 eggs
½ cup skim milk
4 slices wholegrain bread
1 teaspoon olive oil
2 tablespoons unsweetened yoghurt
2 cups sliced fruit such as peaches, mango or pear
honey

METHOD
1. Beat the egg and milk. Soak the bread in the milk and coat evenly
2. Heat a non-stick frying pan over medium heat. Add the olive oil to the pan. Cook the slices of bread for 2–3 minutes a side.
3. Serve with a dollop of yoghurt and spoon over sliced fruit. Drizzle with a little honey.
