CRISPY BROCCOLI & CARROT FRITTERS

Broccoli fritters

INGREDIENTS
4 cups water
2 cups broccoli florets
1 cup cut carrots
1/2 cup plain flour
1/3 cup grated parmesan cheese
1/2 teaspoon salt
Pepper to taste
2 spring onions, thinly sliced
1 large egg
2 tablespoons olive oil
1 cup plain low fat yogurt
2 teaspoons fresh chopped dill

METHOD
1. Place water, broccoli and carrots in a small saucepan; bring to boil and cook for 4 minutes. Drain, then pat broccoli mixture dry with paper towel and chop finely.
2. Place broccoli mixture and flour in a large bowl and stir to coat. Add cheese, salt, pepper, onions and egg to mixture and combine.
3. Heat a large non-stick pan over medium heat. Add oil to coat pan. Spoon 1/4 cup of broccoli mixture into pan and flatten slightly. Repeat 7 times to make 8 fritters. Cook 4 minutes each side or until golden brown.
4. Combine yogurt and dill in a small bowl and serve with fritters.
