BLUEBERRY BLISS BALLS

INGREDIENTS

1½ cups cashews

½ cup shredded coconut

½ cup dried blueberries

¾ cup medjool dates, pitted

1–2 tablespoons fresh lemon juice

1 teaspoon lemon zest

½ teaspoon pure vanilla extract

pinch of fine sea salt

 

METHOD

  1. Place all the ingredients in a food processor and process to combine. If the mix is too dry add water until it holds together.
  2. Roll into balls using your hands, then roll in a topping of your choice. Choose from toasted sesame seeds, coconut, chopped nuts and cocoa powder.
  3. Store in the fridge for up to a week in an airtight container. They can also be frozen.
  4. Remember only one or two protein balls for a snack.
