BLUEBERRY BLISS BALLS
1½ cups cashews
½ cup shredded coconut
½ cup dried blueberries
¾ cup medjool dates, pitted
1–2 tablespoons fresh lemon juice
1 teaspoon lemon zest
½ teaspoon pure vanilla extract
pinch of fine sea salt
- Place all the ingredients in a food processor and process to combine. If the mix is too dry add water until it holds together.
- Roll into balls using your hands, then roll in a topping of your choice. Choose from toasted sesame seeds, coconut, chopped nuts and cocoa powder.
- Store in the fridge for up to a week in an airtight container. They can also be frozen.
- Remember only one or two protein balls for a snack.
