BANANA MUFFINS

(makes 6 large muffins)

INGREDIENTS

1 3/4 cups wholemeal self raising flour

1/4 cup skim milk powder

1/2 cup low fat natural yogurt

1 egg

1/2 cup orange juice

3/4 cup brown sugar

1/4 cup water

2 large bananas mashed

2 tablespoons sultanas

1/2 teaspoon ground cinnamon

 

METHOD

  1. Place flour, milk powder, yogurt, egg, orange juice, sugar, water, bananas, sultanas and cinnamon in a large bowl and mix to combine. Take care not to overmix.
  2. Spoon mixture into 6 non-stick large muffin tins and bake for 30-35 minutes or until cooked.

PUMPKIN MUFFINS

Replace bananas with 1 cup cooked mashed pumpkin. 1150kj/275 calories per muffin

 

PINEAPPLE & APRICOT MUFFINS

Replace bananas with 440g canned pineapple pieces drained & chopped and 30 g chopped dried apricots. Replace orange juice with apricot nectar. 1090kj/260 calories per muffin.
