APRICOT BALLS

Preparation time:  1 hour inc refrigeration

Serves: 30 balls

Apricot balls

Ingredients

  • 250g dried apricots, chopped finely
  • 3/4 cup sweetened skim condensed milk
  • 1 cup desiccated coconut
  • Extra coconut for rolling

Method

  1. Combine all ingredients except extra coconut
  2. Roll into balls, approximately 3cm in diameter
  3. Roll balls in extra coconut, then refrigerate until set, approximately 1 hour
